Salad is a great way to enjoy summer

Warm mornings, weekends in the park, long evenings; it all adds up to a jolly good time.With the summer solstice approaching you’ll want to have as much energy as possible to make the most of those long sunsets. Luckily, there are plenty of seasonal goodies available to help you along: bundles of berries, fresh fruits, sumptuous salads... they’re all in season this summer. All that’s left for you to do is decide which ones you like best.

Blueberries have been on the shelves for years, but only recently have they really gotten the credit they deserve. Blueberries are bursting with antioxidants, which boost your immune system, making sure that you’re up and running for whatever you want to do next.

British carrots start to spring up in May, but they’re most abundant in June. They get their bright colour from something called carotene, which is another immune boosting compound. Seasonal carrots are the tastiest you’ll get all year round, so eat them raw in a salad to make the most of their sweet flavour.

Salad greens
Summer is the great season of the salad; an ideal light dinner after a hot day outside. Tangy greens like chicory and endive stimulate the liver, making them great detoxifiers, whilst lettuce and other leaves are full of vitamins and minerals. 


The beetroot may look a little lacklustre, but take away the skin and you’ll be blown away by the colours underneath. It’s a super-root whose health giving ingredients are nothing to be scoffed at. Its properties are anti-inflammatory, antioxidant, immune-boosting and detoxifying.
